Ingredients

2 tbsp olive oil

4 tsp garam masala

225g couscous

2 tbsp lemon juice

225g frozen petit pois

¼ cucumber, skin on, diced

½ pack spring onions, trimmed and sliced

1 red pepper, de-seeded and cut into small pieces

160g pack Asda Peeled King Prawns

2 x 135g packs Asda Honey Roast Salmon

Method

Heat 1 tbsp of the olive oil in a pan, add the garam masala and cook gently, stirring, for 1 minute. Remove the pan from the heat, add the couscous and 300ml boiling water, then leave, covered, until the contents are completely cold.

Transfer the couscous to a large bowl, add the lemon juice and the rest of the olive oil. Fluff up with a fork and mix thoroughly, then season to taste with salt and pepper.

Meanwhile, boil the petit pois for 3 minutes, drain onto a colander and rinse under cold water to stop them from continuing to cook. Set aside.

To serve, stir the cucumber, spring onion, pepper, prawns, salmon and cooked petit pois into the couscous.
