Ingredients

2 large red onions, sliced

2 eggs, beaten

125g plain flour

1/2 tsp cumin

1/2 tsp turmeric

1 tbsp fresh coriander, chopped, plus a few leaves, to garnish

2 tbsp vegetable oil

1 ripe mango, peeled and stoned

1 tsp cider vinegar

2 tbsp apple juice

Method

Mix the onions and eggs in a bowl. Sift in the flour and spices, add the coriander and stir to combine.

Heat 1 tbsp oil in a frying pan. Add spoonfuls of the mixture and cook for 1 minute on each side. Repeat with the remaining mixture, adding more oil as you go.

Blitz the mango in a food processor with the vinegar and apple juice. Top the bhajis with coriander leaves.
