Ingredients
1 onion, roughly chopped
4 cloves garlic
2 large thumbs ginger, peeled and chopped
1 bird's eye chilli
2 tbsp fresh thyme
1 tsp all spice
1 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp turmeric
1 tsp coarse ground black pepper
2 limes, zest and juice of
75ml reduced salt soy sauce
1kg chicken wings
Method
1Combine everything except the chicken in a food processor and blitz. Cover the chicken wings with the marinade, cover and refrigerate. Marinate for a minimum of two hours and preferably overnight for maximum flavour.
2To cook, pre-heat the oven to 200C/180C Fan/Gas 6. Lightly oil a baking sheet and spread the marinated wings in a single even layer. Bake for 35 – 40 minutes. Serve piled in a bowl with plenty of kitchen roll for finger wiping!
