Ingredients

400g pack Asda Green Beans, trimmed

100g breadcrumbs

25g ground almonds

1 lemon, zest of

1/2 level tsp dried mustard powder (optional)

25g flour

2 eggs, beaten

Method

Pre-heat the oven to 200C/180C Fan/Gas 6. Line a baking sheet with baking paper. On a large plate, mix together the breadcrumbs, almonds, lemon zest and mustard powder, if using.

Put the flour and eggs in separate shallow bowls and season the flour. Dip the beans first in the flour, then the egg, and finally in the breadcrumb mixture. Roll to coat, then arrange in a single layer on the baking sheet, leaving gaps between them.

Cook in the pre-heated oven for 15 minutes, until golden and crisp.
