Ingredients
175ml buttermilk
125g flour
1 tsp light soy sauce
100g dried breadcrumbs
2 tbsp olive oil
Pinch cayenne pepper
1 large onion, sliced into thick rings
Method
1Pre-heat the oven to 200C/180C Fan/Gas 6. Line 2 baking sheets with baking paper.
2Beat together the buttermilk, flour and soy to make a thick batter.
3Put the breadcrumbs in a bowl and mix in the oil, cayenne and a pinch of salt.
4Dip the onion rings in the batter, then in breadcrumbs to coat. Put on the trays and bake for 15-20 minutes.
