Ingredients
300g can Asda Adzuki Beans
4 sun-dried tomatoes from a jar, drained
4 sprigs flat-leaf parsley
75g fresh breadcrumbs
1 tsp oil from the sun-dried tomatoes jar
2 tbsp Asda Sweet Chilli Sauce
1 tbsp Asda Extra Special Caramelised Onion Chutney
Olive oil, for brushing
4 burger buns
Lettuce, to serve
Tomato, to serve
Ketchup, to serve
Method
1Pre-heat the oven to 190C/170C Fan/Gas 5.
2Drain the beans through a sieve and rinse well under the cold tap. Put them in a large bowl and mash with a potato masher.
3Cut the sun-dried tomatoes and flat-leaf parsley sprigs into small pieces with scissors. Add to the mashed beans, along with the fresh breadcrumbs, the oil from the sun-dried tomatoes jar, the sweet chilli sauce and the caramelized onion chutney.
4Season to taste with salt and pepper. Stir together with a spatula or wooden spoon, then finish mixing with your hands.
5Line a baking tray with baking paper. Shape the bean mixture into four flat cakes, using your hands, and put on the baking paper.
6Brush the tops with olive oil and cook in the oven for 15 minutes. Serve in burger buns with lettuce, tomato and ketchup.
