Ingredients

4 tbsp Szechuan peppercorns (or mixed peppercorns), finely ground

4 tsp caster sugar

4 tbsp wholegrain mustard

900g beef fillet

3 tbsp Asda Extra Virgin Olive Oil

Roast parsnips, to serve

Asda Extra Special Dauphinoise Potatoes, to serve

Method

Pre-heat the oven to 220C/200C Fan/Gas 7.

Mix the peppercorns and caster sugar together and sprinkle this mixture over a chopping board.

Spread the mustard all over the beef and the roll the fillet in the pepper and sugar, coating it thoroughly.

Heat a large non-stick, ovenproof frying pan until very hot. Add the fillet of beef and sear for about 3 minutes, turning regularly until the meat is golden brown all over.

Place the pan in the oven for 20-25 minutes, then remove the beef from the oven and allow to rest.
