Ingredients
100g ciabatta
1/2 unwaxed lemon, finely grated zest of
1/2 tsp smoked paprika
Pinch of cayenne pepper
Pinch of salt
1 large free-range egg
1 tbsp olive oil
15g butter, melted
3 tbsp flour
4 x 125g pieces line caught cod loin
4 Asda Deli Ciabatta Rolls
Salad leaves, to serve
Mayonnaise, to serve
Method
1Pre-heat the oven to 200C/180C Fan/Gas 6. Break the 100g ciabatta into bits and put in a processor with the lemon zest, smoked paprika, cayenne pepper and salt. Whizz into fine crumbs and then put in a shallow dish.
2Lightly beat the egg, olive oil and melted butter together and put in another shallow dish. Put the flour on a plate.
3Take the cod and coat one piece in the flour, shaking off any excess. Dip it in the egg mixture, then the crumbs, patting the crumbs on firmly. Put on a baking tray and repeat with the other pieces of fish. Discard any leftover crumb mixture.
4Cook for 15-20 minutes until crisp and golden brown.
5Split the ciabatta rolls in half and fill with the fish, salad leaves and mayonnaise.
