Ingredients
550g plums, quartered and stoned
4 tbsp apple juice
1 tbsp granulated sugar
125g plain flour
65g butter, chilled
65g caster sugar (or demerara sugar)
Custard, to serve
Method
1Pre-heat the oven to 190C/170C Fan/Gas 5. Put the plums, apple juice and granulated sugar in a pan, cover and cook gently for 10 minutes or until the plums start to soften. Tip into an ovenproof dish.
2Sift the flour into a large bowl. Cut the butter into small cubes and rub into the flour with your fingertips until the mixture resembles breadcrumbs (or you could do this in a processor). Stir in the sugar.
3Sprinkle the crumble on the plums. Bake for 25 minutes. Serve with custard.
