Ingredients

800g potatoes, peeled and sliced about ½ cm thick

420g pack Asda Butcher’s Selection Lamb Leg Steaks cut into large cubes

1 large onion, chopped

2 carrots, sliced

1 tbsp chopped fresh thyme (or 1 tsp dried thyme)

1 lamb stock cube

15g butter, melted

Method

Pre-heat the oven to 160C/140C Fan/Gas 3. Put a third of the potatoes in a 2-litre casserole dish.

Add half of the lamb, onion, carrots and thyme. Cover with another third of the potatoes then the rest of the onion, carrots, lamb and thyme.

Arrange the remaining potatoes on top, overlapping. Dissolve the stock cube in 800ml boiling water and pour into the casserole so that it's just level with the bottom of the top later of potato.

Cover and cook in the oven for 2 hours and 15 minutes.

Remove the lid and brush the top layer with melted butter. Cook, uncovered, for another 45 minutes.
