Ingredients

250g plain flour

1.5 level tsp ground ginger

½ level tsp baking powder

125g light soft brown sugar

150g lightly salted butter

Method

Pre-heat the oven to 180C/160C Fan/Gas 4. Line a small roasting tin, 19cm by 29cm, with baking paper.

Sift together the flour, ginger and baking powder. Stir in the sugar.

Melt the butter and mix with the dry ingredients - it will be crumbly.

Put in the tin in an even layer, pressing it down lightly. Bake for 30 minutes. Mark into squares while warm but don't try to move from the tin until cold.
