Ingredients
400g rolled oats
100g Asda Wholefoods Seed Mix
100g pecan nuts, roughly chopped
25g desiccated coconut
50g flaked almonds
2 tbsp sunflower oil
100ml maple syrup
2 tbsp clear honey
1/2 tsp vanilla extract
Blueberries, to serve
Chosen by you Greek Style Natural Yogurt, to serve
Method
1Pre-heat the oven to 160C/140C Fan/Gas 3. Line 2 baking trays with baking paper. Mix the oats, seed mix, pecans, coconut and almonds in a bowl.
2Spread over the lined trays and cook in the oven for 5 minutes, or until the almonds are just beginning to brown. Transfer back to the bowl, leaving the baking paper on the trays.
3Warm the oil, maple syrup, honey and vanilla extract in a pan, over a medium heat, for 2-3 minutes.
4Pour the syrup mixture over the oat and nut mixture. Toss well to coat.
5Spread over the lined baking trays and cook in the oven for about 20 minutes, stirring halfway through. Check after 15 minutes as it may take less time – the granola should be just golden brown when cooked. Leave on the tray to cool.
6To serve, mix the granola with the blueberries, then layer with the yogurt.
