Ingredients

2 onions, diced

1 garlic clove, chopped

2 tbsp olive oil

2 oranges

450g chopped carrots

1 potato, chopped

1 litre vegetable stock

50ml half fat crème fraîche

Method

Gently cook onions and garlic in olive oil in a covered pan for 10 minutes.

Add the orange zest, juice, carrots, potato, and vegetable stock. Cover, bring to the boil and simmer until tender.

Cool, then blend with crème fraîche. Serve with a swirl of crème fraîche.
