Ingredients
450g mixed dried fruit
1 tea bag
250g granulated sugar
450g self-raising flour
1 level tsp mixed spice
1 large egg, lightly beaten
Method
1Put the fruit in a bowl. Put the teabag in a measuring jug and pour on boiling water to make 300ml. Leave for 4 minutes then remove the tea bag and pour the tea over the fruit. Stir in the sugar. Cover and leave to soak overnight or for at least 10 hours.
2Line a loaf tin with baking paper. Pre-heat the oven to 160C/140C Fan/Gas 3.
3Sift the flour with the spice and stir into the fruit mixture with the egg. Turn the mixture into a loaf tin and bake for 1.5 hours or until a skewer inserted in the middle comes out clean. Cool on a wire rack.
