Ingredients
2 browning medium bananas, peeled and mashed with a fork
1 large free-range egg
130g self-raising flour
1 tbsp baking powder
55g butter, softened, plus extra for greasing
100g caster sugar
Method
1Pre-heat the oven to 180C/160C Fan/Gas 4. Grease a loaf tin, about 22cm x 12cm in size, with butter.
2In a large bowl, mix everything together, combining well with a fork. You may need to add a drop of milk to achieve a loose dropping consistency, depending on how mushy the banana is.
3Pour into the tin and bake for 35-40 minutes or until a skewer inserted into the middle comes out clean. Leave to cool in the tin then turn onto a wire rack. Serve with warm custard or slice for teatime.
