Ingredients
2 aubergines, sliced
3 tbsp olive oil
100g Cook by Asda Diced Onions
350g Cook by Asda Sliced Mixed Peppers
1 tsp Asda Frozen Garlic
400g can Asda Chopped Tomatoes with Herbs
50g fresh breadcrumbs
50g mature Cheddar cheese
Method
1Brush the aubergine with a little oil and bake in the oven at 180C/160C Fan/Gas 4 for 8-10 minutes.
2Cook the onion, peppers and garlic with 3 tbsp water for 3 minutes. Drain off the liquid, leaving the vegetables in the pan, and stir in the remaining oil and tomatoes. Simmer uncovered for 5 minutes.
3Layer the pepper mixture and aubergine slices in an ovenproof dish, finishing with a layer of aubergine.
4Sprinkle on the breadcrumbs and grated Cheddar and bake for 25 minutes.
