Ingredients
1 tbsp sunflower oil
15g butter
2-3 leeks, trimmed of tough green leaves and finely sliced
300g fusilli pasta
200g pack Asda Smoked Bacon Lardons
250g Asda Smart Price Mushrooms, chopped
200g bag Asda Frozen Scallops
Method
1Heat 2 tsp of the oil and the butter in a pan. Add the leeks and stir once, then cover and cook gently for 10-15 minutes. Tip into a bowl and keep warm.
2Fill a large pan with boiling water and add the pasta. Boil for 10-12 minutes.
3Cook the lardons in a non-stick pan until the fat starts to crisp. Add to the leeks, leaving the fat in the pan. Cook the mushrooms in the fat until most of the liquid has evaporated. Add to the leeks and bacon.
4Wipe the pan. Add the rest of the oil and cook the scallops over a low heat for 5 minutes. Drain the pasta and serve with the leeks, bacon, mushrooms and scallops.
