Ingredients

400g new potatoes

240g pack Asda Green Beans, trimmed

2 x 280g packs Asda Salmon Fillets, skinned

1 lemon, zest and juice of

4 sprigs parsley

50g butter

Method

Pre-heat the oven to 200C/180C Fan/Gas 6. Cut 4 large squares of baking parchment, about 30cm x 30cm each.

Boil the new potatoes until just tender.

Drain and halve or quarter, depending on the size. Boil the green beans for 2-3 minutes, then drain.

Divide the potatoes and beans between the squares of baking parchment. Put a piece of salmon on top. Add lemon zest and juice, a sprig of parsley and a piece of butter to each one. Season with black pepper.

Wrap up the baking parchment to make 4 parcels, leaving room inside for the air to move around. Fold to seal the edges tightly.

Put the parcels on a baking tray and cook in the oven for about 18 minutes or until the salmon flakes easily.

Serve in the parcels.
