Ingredients
2 tbsp olive oil
1 large onion, chopped
1 garlic clove, crushed
1 aubergine, cut into 1cm cubes
2 peppers (1 red and 1 yellow), de-seeded and sliced
3 courgettes, cut into 1cm slices
300g tomatoes, chopped
1 tsp dried oregano
660g pack Asda Butcher's Selection Pork Loin Steaks
Crusty bread, to serve
Method
1Heat the oil in a large saucepan and cook the onion over a medium heat, stirring often, until it's soft but not coloured. Add the garlic and cook for another minute.
2Add the aubergine, peppers and courgettes and cook, stirring for another 3-4 minutes. Add the tomatoes and oregano, then season with pepper. Cook, stirring, for another 3-4 minutes until the tomatoes break down.
3Add 2 tbsp water and cook over a low heat, stirring often, for 20-25 minutes.
4Cook the pork in a griddle pan for 10 minutes until cooked through, turning occasionally.
5Serve with the ratatouille and crusty bread.
