Ingredients
100g granulated sugar
200ml clear apple juice
Juice and zest 1/2 lemon, pared with a peeler
2 cardamom pods
1 vanilla pod
500g apricots, preferably slightly firm
Method
1Pre-heat the oven to 180C/160C Fan/Gas 4. Put the sugar, apple juice, lemon juice and zest, plus 200ml water, in a pan.
2Lightly crush the cardamom pods with a rolling pin. Make a cut along the length of the vanilla pod with a sharp knife. Add the cardamom and vanilla pods to the pan. Heat gently, stirring, until the sugar dissolves. Then simmer, uncovered, for 15 minutes.
3Meanwhile, halve and stone the apricots and put in an ovenproof dish.
4Pour the hot juice mixture over the apricots. Cook in the oven, uncovered, for 20-25 minutes until the apricots are just tender.
