Ingredients
100g leftover Butcher's Selection Roast in the Bag Piri Piri Pork Loin Joint
1 tbsp sunflower oil
8 mushrooms
1 onion
1 sheet puff pastry
1 clove garlic
Lemon & pepper salad dressing
Long grain white rice, to serve
Method
1Pre-heat the oven to 180C/160C Fan/Gas 4.
2Heat 1 tbsp sunflower oil (or use leftover juices from the pork) in a pan over a medium heat.
3Dice the onion, mushrooms and garlic and fry for 2 minutes.
4Roll out the pastry and place the pork and vegetables in the centre. Fold each corner in and press to secure the parcel. Brush the parcel over with milk or egg.
5Cook in the oven for 20 minutes, until the pastry is golden brown.
6Serve with long grain rice cooked to packet instructions, tossed in lemon & pepper dressing.
