Ingredients

540g tin Asda New Potatoes

8 tbsp Asda Extra Special Basil Pesto

180g Asda Fine Beans, halved

2 Asda Basa Fillets

2 tsp Olive Oil

Method

Preheat the oven to 200C/180C fan/gas 6. Cut two 50x50cm pieces of parchment paper. Fold in half and cut into a half-heart shape, then open out into two large heart shapes. Place each one onto a baking tray.

Drain, rinse and pat dry the potatoes; halve any larger ones.

Spread 1 tbsp of the pesto onto one side of the paper (roughly the size of a fish fillet, then layer on top half of the beans and potatoes along with some salt and black pepper. Add another tablespoon of pesto then top with a basa fillet. Brush the fish with 1 tsp olive oil and season.

Fold in the edges of the paper at regular intervals until you have a sealed packet. Repeat for the second packet, then bake for 18–20 mins until the fish is cooked. Transfer the packets to plates, then carefully open to let the steam release. Add another 2 tbsp pesto to each fillet of fish and serve.
