Ingredients

125g glace cherries

50g marzipan, cut into cubes

25g ground almonds

115g self-raising flour

100g butter, softened

100g caster sugar

2 medium eggs

100g icing sugar

Method

Pre-heat the oven to 180C/160C Fan/Gas 4. Grease six holes of a silicon muffin tray. Set aside six whole cherries and half the marzipan. Halve the remaining cherries and mix with almonds, marzipan and 1 tbsp of the flour.

Mix together the butter, caster sugar, eggs and remaining flour and beat until creamy.

Stir in the cherry and marzipan mixture. Divide between the muffin holes and bake for 20 minutes. Cool on a wire rack.

Mix the icing sugar with 2-3 tsp warm water to make icing. Spoon onto the cakes and top with the reserved cherries and marzipan.
