Ingredients
150g plain flour, plus extra for rolling out
85g butter, in small pieces
1 level tbsp icing sugar
1 egg yolk
25g butter
100g full fat soft cheese
50g caster sugar
1 lemon, zest of
75g caster sugar
1 level tbsp plain flour
2 egg yolks
75g ground almonds
1 tbsp milk
2 tbsp Extra Special lemon curd
Method
1Pre-heat the oven to 200C/180C Fan/Gas 6. Rub the butter into the flour, then add the icing sugar and a pinch of salt. Mix the egg yolk with 2 tsp water and add to the flour mixture to make a stiff dough. Roll the pastry out to the thickness of a pound coin and cut out 12 rounds. Use to line 12 tartlet tins.
2Put half a tsp lemon curd in each (no more or it will bubble over).
3Beat the butter, cheese and sugar until just evenly mixed. Stir in the lemon zest, sugar, flour, yolks and ground almonds.
4Divide the mixture between the cases and bake for 20 to 25 minutes.
