Ingredients

40g butter, softened

1 tsp chopped curly parsley

1 tsp lemon juice

1 Asda Frozen Cooked Lobster (350g)

Method

Mix the butter with the parsley and lemon juice, and season with black pepper. Make into a sausage shape, wrap in cling film and chill.

Thaw the lobster in the fridge and drain off any excess water.

Lay the lobster on a chopping board. Carefully cut down the middle with a large, sharp knife.

Remove the greyish gills and stomach pouch.

Remove the vein that runs along the tail.

Twist off the claws and bash with a rolling pin or the back of a knife to crack open, and then remove the meat.

Top with slices of the herb butter and put under a pre-heated grill to melt.
