Ingredients
490g pack Butchers Selection Chcken Breast Fillets, cut into thin strips
3 tbsp Balsamic Vinegar
2 tbsp honey
2 packs 90g Asda baby leaf salad
Quarter of a cucumber
80g pack Asda pomegranate seeds
Asda Good For You Honey & Mustard dressing - or any other dressing of your choice, to serve
Crusty bread, to serve
Method
1Pre-heat the oven to 200C/180C Fan/Gas 6. Line a baking tray with baking paper.
2Toss the chicken pieces with the balsamic and honey, leave to marinade for 5 minutes. Season, remove from marinade then place on the baking tray and cook for 12-15 minutes until cooked through.
3Half the cucumber lengthways, scoop out the seeds with a teaspoon and slice into half moons.
4Toss together the salad leaves, cucumber and pomegranate seeds. Scatter the chicken pieces on top.
5Serve with a drizzle of dressing and the crusty bread.
