Ingredients

1 onion

1 bay leaf

4 cloves

600ml milk

A pinch of salt

A small pinch of freshly grated nutmeg

200g stale white bread (weighed without crusts)

25g butter

3 tbsp double cream (optional)

Method

Cut onion into quarters and stud each quarter with a clove. Put in a pan with milk, bay leaf, nutmeg and salt.

Heat gently until simmering. Remove from the heat and set aside for 30 minutes. Discard the onion, clove and bay leaf. Reheat until hot, but not boiling.

Make breadcrumbs with the white bread. Stir into the milk with butter and set aside for 10 minutes.

To make it extra creamy, stir in double cream. Leave to cool and refrigerate. Reheat for 3 minutes in the microwave on Christmas Day.
