Ingredients

160g Asda Extra Special Tenderstem Broccoli

1 tbsp Olive Oil

100g Giant Plain Cous Cous

4 tbsp Asda Green Olive, Lemon & Coriander Tapenade

150g Asda Succulent Cooked & Peeled Cold Water Prawns

Lemon wedges, optional to serve

Finely chop the florets from broccoli and set aside. Cut the stems into 3–4cm pieces, or smaller if the stems are particularly thick. Boil half a kettle of water.

Heat the oil in a saucepan over a medium heat, then add the cous cous and fry for 1–2 mins until golden. Add 500ml just-boiled water to the pan and stir. Simmer for 8 mins, adding the broccoli stems for the final 2–3 mins.

Drain well, then return everything to the still-warm pan and stir through the tapenade and the chopped broccoli florets. Cover and leave to stand for at least 10 mins. When cool, stir through the prawns and some cracked black pepper. Serve with a squeeze of lemon, if you like.
