Ingredients
2 x 350g packs Asda Extra Special Spinach and Ricotta Filled Gnocchi
350g pot Asda Tomato and Basil Sauce
250g mushrooms, sliced
180g bag Asda Baby Spinach
50g Parmesan, shaved into thin pieces with a vegetable peeler or sharp knife
2 tbsp oil
Method
1Heat a large pan of water until boiling. Add the gnocchi and simmer for 2 minutes, then drain and set aside.
2Heat the tomato and basil sauce in the pan until just simmering.
3Meanwhile, heat the oil in a large frying pan and cook the mushrooms until they start to turn golden. Add the spinach and cook for 1-2 minutes or until it wilts.
4Mix the sauce with the gnocchi, spinach and mushrooms, and serve sprinkled with the Parmesan shavings.
