Ingredients
2 large ripe bananas
2 tbsp maple syrup
3 eggs, beaten
1 tbsp milk
4 slices farmhouse white bread
15g butter
4 slices streaky bacon, dry-fried
Method
1Slice the bananas and toss with the maple syrup. Mix the beaten eggs and milk together in a bowl.
2Arrange the slices of banana on 2 pieces of the bread. Top with the remaining slices of bread.
3Heat the butter in a frying pan. Dip both sides of each sandwich in the egg and milk mixture, or brush it over. Put the sandwiches in the pan and cook for 3 minutes on each side, until golden.
4Arrange the slices of dry-fried crispy bacon on top of each sandwich. Serve with extra maple syrup to drizzle over the top, if you like.
