Ingredients
325g penne
155g pack Butcher's Selection Lean Diced Bacon
1 tbsp sunflower oil
1 small onion, chopped
325g frozen peas
1 level tsp mixed dried herbs
50g Chosen by you 30% Less Fat Mature Light British Cheese, grated
Method
1Add the pasta to a pan of lightly salted boiling water. Simmer fast, uncovered, for 10-12 minutes. Drain, reserving 150ml of the liquid. Keep warm.
2Meanwhile, cook the bacon in a non-stick frying pan until it starts to crisp. Remove with a draining spoon and put on a plate lined with a double layer of kitchen paper. Keep warm.
3Add the oil to another pan and fry the onion until soft. Add the reserved pasta liquid, the peas and herbs, and bring to the boil. Cover and simmer for 5 minutes.
4Remove two-thirds of the peas with a draining spoon and add to the pasta. Purée the rest with the cooking liquid. Season, then stir into the pasta with the cheese.
5Sprinkle the bacon on top of the pasta and serve.
