Ingredients
2 tbsp olive oil
1 large onion, chopped
2 yellow peppers, de-seeded and sliced
2 x 390 cartons Asda Chopped Tomatoes with Garlic
1 level tsp Asda Crushed Chillies
2 tsp dried oregano
1 level tsp sugar
350g penne pasta
100g extra mature Cheddar, grated
Method
1Heat the oil in a large pan, add the onion and cook over a medium heat for 2-3 minutes. Add the yellow peppers and cook for another 2-3 minutes.
2Add the tomatoes, dried chillies, oregano and sugar. Bring to the boil and simmer the sauce, uncovered, for 15 minutes, stirring often, until it has slightly thickened.
3Meanwhile, add the pasta to a large pan of boiling water and bring back to the boil. Stir once, then simmer fast, uncovered, for 10-12 minutes. Drain and return to the pan.
4Add the tomato sauce to the pasta and toss. Serve sprinkled with cheese.
