Ingredients
2 crumpets
1 tbsp ketchup
Slice of cooked ham
1 tbsp canned sweetcorn
25g grated mozzarella
Red pepper, diced
Cherry tomatoes, to serve
Lettuce, to serve
Method
1Toast the crumpets and spread each one with tomato ketchup.
2Divide the ham between the crumpets, add the sweetcorn and diced red pepper.
3Sprinkle with grated mozzarella.
4Grill until the cheese melts.
5Serve with cherry tomatoes, lettuce and cucumber slices.
