Ingredients
100g salted butter, at room temperature
1 red chilli, de-seeded and finely chopped
1/2 lime, finely grated zest of
1 tbsp lime juice
1 tbsp chopped coriander
1 tsp oil
4 corn on the cobs
Method
1Mix together all the ingredients except the cobs and shape into a fat sausage. Wrap in baking paper or cling film and chill.
2Remove any white threads from the corn on the cobs and boil in a pan of water for 10 minutes or until tender.
3Drain and serve with slices of the flavoured butter.
