Cajun-style cod with sweet potato wedges

Ingredients

2 large sweet potatoes, peeled

3 tbsp sunflower oil

2 level tbsp Asda Cajun Seasoning (from a tub)

2 packs cod fillet

350g green beans, to serve

Pre-heat the oven to 220C/200C/Gas 7. Line 2 baking trays with baking paper. Cut the sweet potatoes into wedges and put in a bowl with 2 tbsp of the oil. Toss to coat in oil. Add 1 level tbsp of the Cajun seasoning and toss again.

Spread the wedges out on one of the baking trays. Cook in the oven for 30 minutes or until tender and browned at the edges, turning them over halfway through.

Brush the fish fillets on both sides with the last tbsp of oil and sprinkle evenly, again on both sides, with the remaining tbsp of Cajun seasoning, rubbing it in lightly with your fingers. Put on the other baking tray and cook in the oven for 10 minutes or until the fish flakes easily.

Serve with the sweet potato wedges and green beans.
