Ingredients

600g Brussels sprouts trimmed

2 tbsp sunflower oil

6 rashers streaky bacon, roughly chopped

3 shallots – finely chopped

25g butter

Method

Add the sprouts to a pan of boiling water, bring back to the boil and simmer for 4 minutes. Drain in a colander and rinse under cold running water until cold. Cut in half or leave whole if they are small.

Heat 1 tbsp of the oil in a wok and stir-fry the bacon for 2 minutes. Add the shallots and cook until the bacon starts to crisp and the shallots are soft. Add the sprouts and another 1 tbsp oil to the wok and stir fry for 4 minutes.

Remove from the heat, add the butter and toss to coat. Put in a warm serving dish and season with pepper.
