Ingredients

1 red onion

1 tbsp sunflower oil

15g butter

1 red cabbage

2 eating apples (preferably Cox's), peeled, cored and diced

2 level tbsp brown sugar

3 tbsp cider vinegar

1 cinnamon stick

150ml apple juice

Method

Cook the red onion with sunflower oil and butter in a large saucepan until soft.

Shred the red cabbage, discarding the hard core and any damaged outer leaves. Add to the red onion and stir to coat.

Add the apples alongside the brown sugar, cider vinegar, cinnamon stick, apple juice and 150ml water. Cover and heat until simmering. Simmer gently for 1 hour, adding a little more liquid if necessary.
