Ingredients

500g leftover cooked vegetables (we used cabbage, carrots and broccoli)

400g tin butterbeans, drained and rinsed

1 garlic clove, roughly chopped

750ml vegetable stock

10g mint, leaves picked plus extra to serve

1 lemon, zested and juiced

Olive oil, optional to serve

Crusty bread, optional to serve

Method

Put all the ingredients into a blender and blitz until smooth, season with a crack of black pepper and pinch of flaky sea salt.

When your ready to serve, put in a saucepan and heat over a medium heat, stirring occasionally until hot. Serve with a crack of black pepper, sprig of mint and drizzle of oil on top along with some crusty bread on the side.
