Ingredients
200g Brussels sprouts
1 tbsp olive oil
1/2 tsp smoked paprika (optional)
50g walnuts, chopped
50g Parmesan, finely grated (or veggie alternative)
Method
1Preheat the grill. Trim the stalk end of the sprouts and pull the leaves apart. Put on 2 baking sheets. Drizzle over the olive oil and paprika, if using.
2Grill for 2 minutes. Toss the leaves to mix. Sprinkle on the walnuts, then cook under the grill for a further 2-3 minutes until the edges of the leaves are slightly browned. Sprinkle the cheese over the top and serve.
