Ingredients

100g leftover Butcher's Selection Roast in the Bag Mexican Pork Loin Joint

1 tbsp sunflower oil

1 red onion

1 green pepper

1 red pepper

Packet of fajita seasoning mix

4 tortilla wraps

Soured cream, to serve

Salsa, to serve

Method

Heat 1 tbsp sunflower oil (or use leftover juices from the pork) in a pan over a medium heat.

Slice the pork, peppers and red onion into thin strips.

Add to the frying pan with a good dusting of fajita seasoning mix and fry for 6-8 minutes.

Place the filling in the middle of a warm tortilla wrap and fold in the edges before rolling. Serve with soured cream and salsa.
