Ingredients
2 Onions, finely chopped
2 tbsp Vegetable Oil
5cm piece of Ginger, finely chopped
2 Garlic cloves, finely chopped
1 tsp Garam Masala
½ tsp Turmeric
1–2 Red Chillies, finely chopped, plus extra to serve
30g Coriander, stalks and leaves finely chopped
1 Cauliflower (around 750g)
200g Fine Green Beans, chopped
200g Asda Seafood Cocktail, defrosted
Lime, cut into four wedges
Method
1Cook the onions in a large frying pan over a medium-low heat with the vegetable oil for 10 mins, until softened. Stir in the ginger, garlic and spices and cook for a further 5 mins. Add the chilli and coriander stalks, reserving the leaves for later.
2Remove the outer leaves from the cauliflower, finely slice and add to the pan. Blitz the florets in a food processor until very finely chopped. Turn the heat up to medium-high, toss in the beans and fry for 2 mins, adding a splash of water if needed.
3Next, mix in the seafood and stir-fry in the spiced vegetables for 3 mins until they start to turn pink. Pour in the cauliflower rice, stirring over the heat for 5 mins until soft and fragrant.
4Fold most of the coriander leaves through the cauliflower rice. Serve with a lime wedge for squeezing over, sprinkle with more coriander and a little sliced red chilli, if you like.
5You can make fritto misto with leftover seafood mix by combining 25g plain flour and 1 tbsp cornflour in a bowl, loosen with sparkling water to make a batter, add your seafood then deep fry in hot oil and serve with lemon.
