Ingredients
1 Aubergine
50g Sun-dried Tomatoes, chopped, plus 2 tbsp of the oil
250g Piri Piri micro rice sachet
1-2 dollops Just Essentials by Asda Low fat natural yogurt
Method
1Heat the oven to 190°C/170°C fan/gas 5.
2Cut the aubergine lengthways into 4 slices and place on a lined baking tray. Pour the sun-dried tomato oil over the aubergines, then roast for 15–20 mins.
3Heat the pack of piri piri rice according to the packet instructions. Divide the aubergine pieces between plates, tumble the cooked rice on top and scatter over the chopped sun-dried tomatoes.
4Finish with a dollop or two of low-fat yogurt and plenty of freshly ground black pepper – delish.
