Ingredients
613g pack Asda Butcher's Selection Chicken Breast Fillets
130g pot Asda Basil Pesto (chilled), or use pesto from a jar
75g fresh breadcrumbs
500g pack Asda Mediterranean Vegetables with Cherry Tomatoes (frozen), cooked as packed instructions, and new potatoes with parsley, to serve
Method
1Pre-heat the oven to 190C/170C Fan/Gas 5. Line a baking tray with baking paper. Using a sharp knife, cut each chicken breast in half through the middle to make 2 thinner pieces. Put on the baking tray.
2Spread the pesto thickly on the chicken fillets and sprinkle over the breadcrumbs, pressing down lightly.
3Bake for 15 minutes or until the meat is cooked through, so the juices run clear.
4Serve the chicken with the Mediterranean vegetables and new potatoes.
