Ingredients

1 tsp olive oil

130g pack diced chorizo

150g pack baby button mushrooms, sliced

200g pack Merchant Gourmet Whole Chestnuts, chopped

6 tsp balsamic vinegar

200g baby spinach leaves

3 tbsp chopped parsley

Method

Heat the oil in a pan and add the chorizo. Fry for 2 minutes.

Add the mushrooms and cook for 3 minutes, stirring.

Add the chestnuts and vinegar. Cook for a further 5 minutes. Stir in the spinach leaves until just wilted. Stir in the parsley and serve.
