Ingredients

225g self-raising flour

2 level tsp baking powder

225g butter, softened, plus extra for greasing

225g caster sugar

4 large free-range eggs

1 large orange (or 2 medium oranges), finely grated zest and juice of

75g unsalted butter

350g icing sugar

3 level tbsp Asda Extra Special Orange Marmalade

Method

Grease two 20cm shallow cake tins. Line with baking paper. Pre-heat the oven to 180C/160C Fan/Gas 4.

Sift the self-raising flour and baking powder together. Beat the butter in a bowl until soft. Add the sugar, eggs, flour and most of the zest. Beat until creamy.

Spoon into the cake tins. Bake in the pre-heated oven for 25-30 minutes. Leave in the tins to cool for 10 minutes, then turn out on to a wire rack.

Beat the unsalted butter with 150g icing sugar until fluffy. Add the marmalade, spread on one cake, then sandwich with the other cake.

Mix the remaining icing sugar with enough of the orange juice to make an icing to drizzle over the cake and sprinkle with zest.
