Ingredients
2 large egg whites
115g caster sugar
1/2 tsp white wine vinegar
1/2 level tsp cornflour
Home2Bake Red Professional Icing Colour, optional
200ml double cream
6 strawberries, green tops removed and halved
Method
1Pre-heat the oven to 140C/120C Fan/Gas 1. Line two baking trays with baking paper. Put the egg whites in a clean bowl, making sure no yolk is in with the whites. Whisk with an electric mixer on low for 2 minutes, then whisk on high to stiff, glossy peaks. Gradually add the sugar, whisking until stiff again after each addition.
2Mix the vinegar with the cornflour. Add a dab of colour, if using, and stir until mixed. Add to the meringue and whisk until just blended.
3Put heaped teaspoons of the mixture on the trays and shape into nests, hollowing out the centres with the back of a teaspoon. Bake for 1 hour or until they can be easily lifted off the paper. Turn off the oven and leave inside to cool.
4Whip the cream until it just holds its shape and put a spoonful in each meringue case. Put a strawberry half on each meringue to decorate.
