Ingredients

40g sugar

2 tbsp fresh lime juice

Dr. Oetker Gel Food Colour in Lime Green

2 tbsp chopped mint leaves

50ml elderflower cordial

Method

Simmer the sugar in 100ml water until dissolved. Take off the heat. Add the lime juice and a little food colouring. Mix well, then pour into an ice-cube tray to fill halfway up. Sprinkle over the mint, then freeze until solid.

Mix the elderflower cordial with 75ml water, add to the tray then return to the freezer.
