Ingredients

4 skinless chicken breasts

1 unwaxed lemon, zest and juice of

3 tbsp Asda Clear Honey

1 tbsp fresh thyme

2 tbsp olive oil

4 medium sweet potatoes (or 2 large sweet potatoes)

Pre-heat the oven to 190C/170C Fan/Gas 5. Put the chicken breasts in an ovenproof dish in a single layer. Mix the lemon zest and juice with the honey, and brush generously over the chicken breasts. Pour the rest in the dish.

Sprinkle with the thyme and drizzle with the olive oil. Season with pepper. Bake in the oven for 25-30 minutes, basting occasionally.

Meanwhile, peel the sweet potatoes and cut into even-sized pieces. Add to a pan of boiling water and simmer for 8-10 minutes or until cooked through. Drain and return to the pan. Stand over a very low heat, uncovered, for a few seconds to drive off any excess moisture. Add the butter, season to taste and then mash with a masher or fork.

Boil the green beans for 4-5 minutes or just until cooked, then drain.

Serve the chicken with the sweet potato mash and tender green beans.
