Ingredients
300g penne pasta
1 sliced onion
2 tbsp oil
1 deseeded and sliced large red pepper
6 leftover sausages
12 cherry tomatoes
Handful of torn fresh basil
Crusty bread to serve
Method
1Cook the penne in a pan of boiling water for 12 minutes. Meanwhile, fry the onion in the oil until soft.
2Add the pepper and cook for a further 2 minutes. Slice the sausages and add to the pan with the cherry tomatoes. Cook for 4 minutes.
