Ingredients
Custard
568ml dairy-free milk
Trifle
85g just wholefoods strawberry jelly
4 tbsp just wholefoods vanilla custard powder
25g food heaven heavenly whipped cream
1 sachet dr. oetker vege-gel
75g dairy-free spread
150ml dairy-free milk
1/2 tbsp cider vinegar
160g self-raising flour
Jelly
568ml boiling water
Decoration
100g frozen berries
Method
1Preheat oven to 180c/160c fan/gas 4 and line & grease the base and sides of a
baking tin approx. 25cm x 25cm.
2Add the dairy-free spread, dairy-free milk, cider vinegar, self-raising flour, caster
sugar and bicarbonate of soda into a mixing bowl and beat until smooth.
3Pour the mix into the lined baking tin and place in the oven for 20-25 minutes. The sponge will be ready when the top is golden brown.
4Make up the custard as per the pack instructions and add a sachet of veg-gel as the custard is boiling.
5Remove the sponge from the oven and cool.
6Pour the custard over the sponge and place in the fridge for 20 mins. Once the custard has firmed you can start to make the jelly.
7Make up the jelly as per the pack instructions and put in the fridge to cool.
Once the jelly is cool/room temperature, gently pour over the set custard.
8Add the frozen berries to the jelly and place in the fridge for 30/40mins until fully set.
9Once the jelly has firmed up, add the cream, slice up and enjoy!
